Stalk Coleslaw

I found myself scratching out this coleslaw from cauliflower stalk, cabbage and celery – it was a hit. To me, the success of slaws is not making them too mayonnaisy:

100g Greek yoghurt or mix mayo & yoghurt

1 chilli, green ideally, finely chopped, or 1 tbs sri racha

Juice of 1 lime

Pinch of sea salt

200g mixed, peeled & shredded: white cabbage, caulitflower/brocolli stalks, celery

Beat together the yoghurt, mayo (if using), chilli, lime and sea salt. Toss thoroughly with your raw vegetables.
