Strawberry Nimbu Pani

Around the Far East you’ll be offered versions of nimbu pani, the salt-sweet lime and water refresher that cuts your thirst and replaces salts lost in the heat. Here’s a more English version. You can use strawberries that are just a little past their best, slightly bruised or soft, but not so far gone that the flavour has changed.

Makes 2 long drinks
 
Juice of 2 lemons
1 tbs sugar
Pinch salt
Handful ripe strawberries, hulled
2 sprigs mint
400ml still or sparkling water
ice
 
Pinch the very tops off your mint sprigs and add to your glasses, along with ice. Pick the rest of the mint leaves from the stems and add, along with the lemon juice, sugar, salt and strawberries, to a blender, and whiz till you have a fresh smelling pulp. Pour over ice and top with water, still or sparkling.
