ULTIMATE TOMATO SAUCE
Serves 6-8
INGREDIENTS
3 tins whole plum tomatoes
100ml extra virgin olive oil
3 fat garlic cloves, peeled & pressed
1 tsp salt
1 tsp sugar
1 small bunch basil, leaves only (optional)
METHOD
Preheat oven to 180°. Tip tomatoes into a large roasting tin. Peel and squash 3 fat cloves garlic under the blade of a knife and add to the tin. Scatter with salt and sugar. Pour over the olive oil, making sure to coat the garlic. Roast for 45 minutes. Take out from oven and fish out the garlic cloves with a fork (you can leave them in you like a good dose of garlic) and break up the tomatoes with a potato peeler. Stir and if any watery liquid remains, return to the oven for 10 minutes. When ready, take out of the oven and tear in your basil leaves. Stir through, taste and season if necessary. If not using straightaway, allow to cool then decant into tupperwares and freeze any you won’t use within 5 days.
